Greek-style lemon potatoes are what happens when roast potatoes decide to get a little dramatic. They're crisp at the edges, soft in the middle, and full of garlicky, lemony, olive oil-soaked flavour. Yes, soaked. That's the whole appeal.

Gaia Iluka matters here because the oil doesn't just coat the potatoes — it mingles with the stock, lemon, and oregano, then reduces into this intensely savoury glaze at the bottom of the pan. The potatoes drink it up. You will too, emotionally.

Method

  1. Heat the oven

    Heat your oven to 200°C. Put the potatoes in a roasting tray large enough to hold them in one layer. Crowding leads to steaming, and steamed potatoes are not why we're here.

  2. Build the marinade

    Whisk together the olive oil, lemon juice, garlic, oregano, salt, pepper, and hot stock. Pour it over the potatoes and toss well so every wedge is coated.

  3. Roast until tender

    Roast for 40 minutes, turning once halfway through. The liquid will reduce, the edges will start catching, and the whole tray will smell like you absolutely know what you're doing.

  4. Turn and crisp

    Turn the potatoes again and roast for another 15–20 minutes until deeply golden, crisp at the corners, and tender all the way through. If there's a little sticky glaze in the pan, even better.

  5. Finish and serve

    Serve immediately with an extra pinch of oregano and, if you like, one last tiny drizzle of Gaia Iluka olive oil. Not because they need it. Because you do.

Cook's notes

  • Use floury potatoes for the best fluffy interior.
  • If the tray dries out too early, add a splash more stock.
  • These are excellent with roast chicken, grilled fish, or a fried egg.
  • Leftovers reheat surprisingly well in a hot oven.

A note on the oil

These potatoes need real olive oil — enough of it, and good enough that you actually taste it. Gaia Iluka gives the roast a proper Mediterranean depth instead of just generic richness. It's sunny, savoury, and exactly what potatoes want.
