You've heard that olive oil is good for you. But "good for you" is vague. What's actually happening when you pour a great extra virgin is considerably more interesting than that.
It starts with polyphenols — naturally occurring compounds found in plants, part of the olive's own defence system. Produced to protect the fruit from disease, UV radiation, and oxidative stress. When you press fresh olives into oil, those compounds come with it. And when you consume them, your body uses them in much the same way the olive did: as protection.

What they are
The two most significant polyphenols in extra virgin olive oil are oleocanthal and oleuropein. Oleocanthal is responsible for that peppery burn at the back of your throat — the one that makes first-time tasters cough. It's not a flaw in the oil. It's a signal. The more you feel it, the more oleocanthal is present. And oleocanthal, research suggests, has anti-inflammatory properties remarkably similar to ibuprofen.
That burn means the oil is working.

Why most olive oil doesn't deliver
The compounds are fragile. Most oils have already lost them.
Polyphenols degrade with heat during processing, with light exposure during storage, and simply with time. A refined olive oil, or one sitting on a supermarket shelf for two years, may taste fine but contain almost nothing of nutritional significance.
Polyphenol content is highest in oils that are cold-pressed from fresh, early-harvest olives and bottled quickly. The harvest date on the bottle matters. The storage matters. The variety of olive matters.
This isn't supplement territory. This is food doing what food is supposed to do — when the oil is genuinely good enough to do it.


How much you need
Two tablespoons. That's a drizzle over your salad, a finish on your soup, the oil you cook your eggs in. This isn't a supplement regimen. It's just lunch.
