How it works
Gaia Iluka Original extra virgin olive oil in its terracotta 500ml bottle with a wooden cap

Start with the bottle.

Every creator we approve receives a bottle of Gaia Iluka Original. Cook with it first; the ideas tend to follow.

  • 500 ml, in dark glass
  • Grown in Koumeika, Samos
  • Cold extracted

Ideas, not assignments.

A few ways in. Make what you would make anyway.

  • A man reaching for bread at a tasting table of olive oil bottles and dried flowers inside the Markou factory on Samos, a woman beside him.

    First pour, no recipe.

Bread, salt and the oil. Your honest first reaction.

  • Korean table, Samos oil.

Finish a fried egg, tofu, namul or gim with it.

  • A woman and a small boy tasting bread and olive oil at a table of bottles at the Markou factory on Samos.

    Taste it with someone.

Family or friends trying it for the first time.

  • Market run to plate.

A market haul that ends in one dish.

  • Two men and two small boys under an olive tree in Koumeika, one boy reaching up into the branches.

    Where it's from.

The grove, the family and the harvest, told from the facts we supply.

  • One bottle, one week.

The same oil across a week of everyday cooking.

Whatever you make, the ground rules apply. Read them

What you would be introducing already comes from somewhere.

Gaia Iluka Original is grown in Koumeika, on the island of Samos. The bottle then travels a long way to be opened at a table in Korea.

  • Olive groves across the hills of Samos, a village and the sea in the distance.

A note from Chef Max

I cook with this oil at Iluka, my restaurant in Jeonju, and my guests were the first to ask where it came from. That is the only kind of recommendation I trust. Taste it, cook with it, and tell people what you honestly think.

One is enough. Leave the others empty.

In your own words. This is the part we read most carefully.
On what, and when. An oil is used before it is written about.
