Less hype.
More flavour.

Olive oil does not have to be a morning shot or a number on a label. It is food: bread dipped into a small dish, ripe tomatoes with oil and salt, a simple plate finished with one good pour.

Cook with it

Three generations in Koumeika.

Gaia Iluka begins with the Markou family, a family business like ours. On their estate in Koumeika, on Samos, they grow and press their own olives.

Today each harvest is timed for when flavour and aroma are at their peak, and the olives are pressed within hours of picking.

About this harvest

Chef Max grating cheese in the kitchen of Restaurant Iluka

From Chef Max

A chef's guests started asking about the oil.

Chef Max, founder of Iluka restaurant in Jeonju, began cooking with this oil in his kitchen. His guests noticed the difference and asked why it tasted so vivid.

It came from one place, one harvest, and one way of doing things.

The oil

Gaia Iluka Original Extra Virgin Olive Oil

Pressed in Koumeika, Samos, within hours of picking and below 27°C. One estate, one harvest, and nothing blended in from anywhere else. Bottled in dark glass with an opaque coating and a wooden cap, because light is what degrades olive oil.

The taste

The taste of Samos.

Fresh green olives, a soft herbal aroma, a mild peppery finish.

Breathe it in before you taste it: green olives and something herbal, alive and specific. Then the oil moves the way a good wine does. A beginning, a middle, and a finish that stays with you.

  1. 01Up front

    Fruitiness

Green and grassy. Fresh green olives, and a soft herbal aroma that reaches you before the taste does.

  2. 02Through the middle

    Bitterness

A gentle bitterness through the centre. Balanced and smooth.

  3. 03The finish

    Pepper

A warm, mild pepper at the back of the throat, and it stays with you. That is the mark of a fresh extra virgin olive oil.

Olive oil quality

Beyond the number.

Acidity is not the whole story

Free acidity is one quality parameter. A lower figure does not, by itself, make a better oil, and an oil with a higher figure can be the better one.

Know where your oil comes from

Koumeika, Samos. Provenance you can check, not a phrase on a label.

Transparency over assumptions

Trust comes from testing and clear product information, not from the lowest number on a label.

Evidence you can understand

Laboratory results, certifications and registrations, listed and explained on our Quality page.
